Kelby’s



This is a corner café.  The people I saw, including aged couples and babies, dressed in casual and informal way.  You could tell they were probably people living in this or surrounding suburb.  I believe this was a café of this neighbourhood, a landmark and gathering place for them.  On the wall at the entrance there posted some certificates of appreciation from various organizations and units in Marrickville.  Apparently, the café has considerable amount of community participation!
Sitting at a corner with my coffee, I observed the people there for a while.  I liked observing their subtle yet meaningful interaction among those friends, mother and daughter, as well as aged couples.  The café seemed to become a stage of performance while I became a supportive audience.

Today’s Pick:
Cappuccino: they are using the imported Vittoria coffee beans.  There was no latte art but the froth was well made, very silky and smooth.  Some cafés put too much emphasis on the latte art, forgetting about the essence of cappuccino: froth.  To me, I would rather have something more traditional and authentic than focusing too much on the trend or appearance.
The food looked nice and gourmet.  I must try it next time!!

這是一間街角咖啡店,坐在裡面,看到的是穿著得平民化的人,有老有幼,我想他們大概是小區的當地人,我想,這是屬於這小區的咖啡店。從它牆上張貼多張各地區單位致送的感謝狀,更引證這咖啡店在社區上的參與。
 

它的裝潢、擺設等,不會給你豪華與別緻的感覺,卻令你有一種格外親切的感覺;正是愛這樣的感覺。

點了一杯咖啡,靜靜坐在一旁,觀看店內顧客邊享用他們的食物,邊與他們的家人或朋友交流,格外有意思:朋友在說笑、小女童在媽媽的懷內發嗲、老夫婦有默契的互相分享食物那一刻,咖啡店成了他們的大舞台,而我,則成為一位忠實支持的觀眾,非常有趣!

今天所選:
Vittoria 的入口咖啡,味道並不算很特別,但這杯的Cappuccino奶泡造得相當出色,很滑與有質感;有時有些咖啡的Cappuccino造得像Latte,奶泡不夠,或許,因為它們都較著重拉出來的拉花好不好看,忽略了,Cappuccino著重的該是奶泡。
這兒的食物賣相相當吸引,可惜今天食得太飽,下次定要留點空位來嚐嚐!

Coffee Companion


Since moving here, I have hardly had any intensive cases to handle in my workplace.  Today became an exception.  I could tell the heart-broken feelings of the lady sitting in front of me…. (Sigh)

Perhaps relationship is just like coffee.  Even though you have the best equipment, espresso machine, beans even from the Cup of Excellence (COE) and milk, you can’t guarantee to make a perfect cup.  It takes time to adjust to the optimal aspect of everything.

It’s unrealistic that we can find a perfect person in the world.  We all have imperfections in various aspects.  But the most important above all are perhaps the very basic elements: respects, appreciation, focusing on the positive things s/he has done rather than picking up those things making you unhappy.  

To the lady I saw today,
I wouldn’t say either side is totally wrong for this is a relationship in which both parts shall be liable for any unhappy moments.  It’s more crucial for you to learn to accept, tolerate, respect, forgive and love.  It’s a test and training of your conflict resolution rather than fault-finding skills.  These, unfortunately, might be a lifelong thing if you want to make the relationship last.  There’s always no free lunch and shortcut!!

But preparing for the worst, if he’s not ready and/or motivated to mend the relationship, don’t feel bad or shameful.  There’s nothing wrong or disgraceful to be a single parent.  Move on… and find somebody who accepts you totally, including your past and your child.  Single-parenthood just means that you are a responsible and mature person.  (You couldn’t imagine how many past cases I handled in which the parents were irresponsible and the children showed complex developmental difficulties and emotional problems!!)   

If not?!  Then be a happy single!!  After all, I always believe that it’s more essential for us to have health and family members.  Sometimes, finding a good partner might just be a bonus.

Just like tasting coffee, it’s really hard to taste the sweetness of the after-taste without the stages of experiencing the bitterness It’s hard but not impossible to find a good coffee ‘companion’ with you.  Identify him by the way he behaves, not only the words he speaks…. or observe if he’s a person ready to speak ‘Thank you’, ‘Sorry’, ‘I love you’, ‘I appreciate you…’ etc.

With all my warmest and most sincere blessings and support.  No matter what, there will always be sunny days after rainy ones.

Swallow



This was the first small café I fell in love with after moving to Australia.  I’ve been to here for a couple of times but each time the quality was so consistently good.  I have no doubt in trusting their devotion in producing good coffee for their loyal customers in which some of them travel from other suburbs to have a cup.  Paintings (swallows) are nice.  Food is fresh.  Services are wonderful.  The only bad words I can say for today is that Angus and Jessica were not here!!
 
Back to the coffee, apart from the good brewing skills, I highly appreciate the professional knowledge of the baristas here.  Today Reece briefed me of the characteristics of the beans they were using and the brewing methods.  This is called ‘professionalism’ which some cafés lack.  

One more special thing is that other than the overwhelmingly popular espresso coffee, Swallow also serves coffee by filter methods, i.e. pour-over, Chemex and aeropress.  You may probably know that beans for filter methods cannot be roasted to the same degree as those for espresso but should be lightly roasted.  Who cares to provide choices for the minorities when the coffee world seems to be market and business driven?  

Thanks for Swallow who caters for people like me having some lactose intolerance and can enjoy coffee in another way by the filter method.  Today’s cup is even Geisha beans which are comparatively more expensive than any other beans.  Totally satisfied today!

Today’s Pick:
Cappuccino: Single origin – Gera Jimma, Ethiopia: I didn’t taste the fruity flavor as expected by the roaster.  But the body was very rich and smooth while the after-taste was very long-lasting.
Aeropress: Panama Santa Teresa Geisha – fruity taste like berries; just like some black tea with not a tiny bit of bitterness.

移居澳洲以後,這是第一間令我鍾情的咖啡店;其後的數次光顧,我也享受到他們很一致而高水準的造啡技術。這讓我絕對相信他們致力於為顧客提供好啡,怪不得忠誠的顧客也特意從別的小區來這兒歎啡。
小店的牆畫很美、食物新鮮、服務也很好。今天唯一不足之處是不能跟店主AngusJessica碰面!
說回咖啡,除了沖調技術優秀,咖啡師的專業知識令我讚嘆。今天咖啡師Reece給我細緻的講解他們用的豆的特性及各種沖調方法。這就叫做「專業」,是一些咖啡店所缺乏的。
此外,除了最流行的意式咖啡沖調外,他們也提供濾沖咖啡。你也許知道濾沖咖啡所用的豆子,不會跟意式咖啡用的豆子一樣,以相同的烘焙度烘焙,而是淺烘焙的。這樣額外支出,在現今以市場及營商主導的環境中,誰會願意顧及顧客中的小眾呢?!
謝謝Swallow,也令和我一樣有點乳糖不耐的人受惠,享用以濾沖方法的咖啡。今天的豆子還是巴拿馬藝伎豆,它的價錢在一般豆子之上,淺烘焙用以濾沖方法,讓今天美滿得不得了!

Cappuccino: 單品俟塞俄比亞Gera Jimma豆,我嚐不到烘焙商建議的果味,但質感卻很厚和滑,而且後感餘韻也悠長。
氣壓式沖泡:巴拿馬藝伎(Panama Santa Teresa Geisha),莓的味道,尤如喝了一杯黑茶一樣,絲亳的苦味也沒有,好一杯!
